The 500 year old German purity law requires that nothing else than water, barley, hops and yeast to be used to produce beer. Step one is to mix hot water and malt. This can be a boring process, so instead we mixed hot and tasty apple juice and malt. Then we soured the juice/wort? with probiotic yoghurt and left the mix to ferment with wild yeast in old wine barrels. After almost two years in oak we added 40% plums and left it another five months before bottling. So what is this then? A cider? A plum wine? A beer? We don’t know, but we like the taste of it. Sour, dry and refreshing, and miles away from the German Purity Law. Totally impure.
