A classic Belgian-style Dubbel with a Texas twist. Dubbels are strong, charismatic, malty brown beers brewed in many abbeys in Belgium. Candy sugar, raisins, and dates were often added to this style to add to the strong dark fruit flavors in this style. Instead, use Mexican brown sugar (piloncillo) plus ancho and chipotle chilis to give a similar profile. The chilis give a slightly sweet raisiny character, while also adding a subtle smokiness. Mexican cinnamon stick is also added for a seasonal kick.
