Halcyon Rheasilvia

It is fermented in red wine barrels with saison yeasts and Halcyon’s house mixed culture. Rheasilvia Bière de Garde was conceived as a sister beer to Halcyon’s Nix Olympica Bière de Mars. The two styles are closely related, and the names are tied together as well. Rheasilvia is the tallest mountain in the solar system, found on the asteroid 4 Vesta. Nix Olympica is the first name for the second tallest mountain in the solar system, Mons Olympus located on Mars. Rheasilvia pours a dark orange with ample foam that slowly fades away. The aroma is full of fruity esters with lots of wine and oak and a brett funk. Flavour notes are sherry and bruised fruit, with full carbonation, light acidity and restrained bitterness. Rheasilvia finishes wine-like and dry.
