In this blend, the explosive mango flavor is supported by the funky aroma of Bretanomyces, the clean lactic acid taste and the smooth character of barrel aging. Based on the results of previous studies, four types of kettle soured blonde ales were fermented in oak barrels with Bretanomyces, and an additional 150 kg of mango was added and fermented for several months.
